Greek ?! Couscous
Posted in Food/Recipes by: AngelaSeveral years ago, I came across a recipe for Greek Couscous. I had never had couscous before so I thought I’d try it. I quickly adapted into Angela’s Greek ?! Couscous. I am sure there’s not much “greek” to this, but I love it! This is one of my most favorite comfort foods. I especially love eating this for breakfast.

Your Ingredients – (peeps not included)
Greek ?! Couscous
1 cup uncooked couscous
1 package sausage, turkey sausage, or keilbasa (whatever your preference)
1 can chickpeas, drained
1 can diced tomatoes, no salt added
1/2 medium purple onion, diced
feta cheese
olive oil
lemon juice
salt/pepper
oregano
Cut and boil the sausage. Cook the couscous according to directions. (Couscous should been done w/i 5 minutes).
In a large mixing bowl, combine several squirts of lemon juice, 2-3 twirls of olive oil, salt, pepper, and a few shakes of oregano.

Add in tomatoes (juice included), diced purple onion, and drained chickpeas. Gently combine.

Drain sausage, and add.

Lastly, add in couscous and as much feta cheese as you like.

As you combine this, you may find it a bit dry. Add a bit more olive oil.
Enjoy!

This sounds wonderful-you are such a good cook! The only reason I know what couscous are is because my husband has made them for me. His mother is from Turkey and his father from Macedonia so he has introduced me to so many great recipes.
